Green Goddess Smoothie

I am back!! Happy New Year everyone.  Sorry for the long break in posts, I really didn't plan to be away from here for this long but after traveling at Christmas, and taking a much-needed break, it took me longer than anticipated to get back into my normal routine.

I never really make many New Year's resolutions, and I certainly never do 'Dry January' because with both Mr. Whisk's birthday and our wedding anniversary in January it isn't really an option.  Celebrations need Champagne, right?!  I do however always get towards the end of January and start to feel like I need to cut back after the overindulgence of the festive period!  So I have hit that point and am trying to cut back on the carbs and inject more fruit and veg into my daily regime.  I don't actually eat a lot of fruit, it really isn't one of my favourite things, so when I want to try and up my vitamin intake I tend to go for a green smoothie like this one.  Pineapple and lime is one of my favourite flavour combinations and I always try to include some spinach or kale to up my vegetable quota too.  Super quick and easy to make and great for a quick weekday breakfast.

RECIPE

Ingredients

Makes 2-3 servings

1/2 Pineapple, chopped

1/2 Mango, chopped

2 Granny Smith apples, peeled and chopped

3 Large handfuls of spinach or kale

Juice of 2 limes

200ml Cold water

METHOD

  1. Chuck everything in a blender and blitz until smooth.  It's as easy as that!
  2. Enjoy whilst channeling your inner healthy goddess.

Tip: If you are short of time in the mornings then prepare and freeze most of the ingredients at the weekend and then just take out and blend when you need them.
