Quinoa, Courgette and Cannellini Bean Patties

Monday is here again and we are now in September, I am not quite sure how that happened, the weeks just seem to be going faster and faster this year!  We had a lovely weekend chilling out at home with some friends, doing lots of cooking and eating far too much.  My perfect kind of weekend!  The problems with our leaking water continue, however, and our landlord has just informed us that they are going to have to rip out our whole kitchen to repair the damage.  This fills me with dread because I don't know how long I am going to be without a kitchen!  But I am just so fed up with all the water everywhere that I don't really care what they have to do as long as they fix it.   Also, a new kitchen could be amazing and it will force me to tidy out all my kitchen cupboards, which is something that I keep putting off.  Every cloud....  So there might be a lot of BBQ and cold recipes coming up on the blog over the next few weeks, will keep you posted!!

If you are looking for a #meatfreemonday recipe then these Quinoa, Courgette and Cannellini Bean Patties are great for a week night dinner.  They are quick and easy to make and can be served as a veggie burger in a bun, or are lovely just with some salad.  They are pictured above with a simple salad and some sun dried tomato hummus.  You can find the recipe for the hummus here.

RECIPE

Ingredients

120g Quinoa, cooked to the pack instructions.  I normally cook it using vegetable stock.  

1 Medium courgette (zucchini), grated

1 Tin of cannellini beans, mashed

2 Cloves of garlic, crushed

120g Cheddar cheese, grated

1/2 Red onion, finely chopped

1 Egg

40g Breadcrumbs

S&P

Oil for frying, I use coconut oil  

Method

  1. Grate the courgette, wrap in a piece of muslin or clean tea towel and squeeze out as much liquid as possible.  Mash the cannellini beans with a potato masher or a fork.  Place the courgette, beans, and quinoa in a bowl and mix to combine.  season with some S&P.
  2. Add the chopped onion, grated cheese, and garlic and mix.
  3. Beat the egg and add to the bowl along with the breadcrumbs.  Mix together and then use your hands to fully combine the ingredients and form the mixture into patties.  The mixture should make approximately 8 burger sized patties, but you could also make smaller nuggets which would be perfect for school lunch boxes. 
  4. Heat some oil in a frying pan and fry the patties for approximately 10 minutes on each side until they are golden and crispy on the outside.
 Perfect served on a bun with some salad and some tzatziki.
