5 Minute Vegan Smoothie Breakfast Bowls
To be honest, I'm not a huge fan of smoothies to drink, I've never really known whether I should have one as an accompaniment to breakfast, or instead of breakfast. All I usually want to drink in the morning is coffee, lots of it! But I see so many pretty pictures on Instagram of beautifully colourful smoothie bowls, with plentiful toppings, that I thought I should give them a try. It turns out that they are super easy to throw together and I love trying different combinations of toppings. This recipe is vegan but if you are happy to include dairy then feel free to substitute the almond milk, or even add some yoghurt to make it extra creamy. For the toppings any combination of seeds, nuts, fresh fruits, dried fruits, granola work well. Use what ever you fancy!
2 Large bananas, chopped and frozen
2 Cups of frozen berries, I used a combination of raspberries, strawberries, and blueberries
80 - 100ml Almond milk
2 Dessert spoons of nut butter, I normally like to use peanut or almond
A drizzle of maple syrup (or honey if not vegan) if you like things sweet
Toppings of your choice
- Put the banana, berries and nut butter into a high speed blender or a food processor. Blitz for a few minutes until the fruit has broken down into very small pieces and it is starting to come together as a thick paste. I find that my blender is not high powered enough to deal with the frozen bananas so I use my food processor and it works well.
- Add in the almond milk slowly, whilst the blender is running, until you have your desired consistency. It should be thick and creamy, similar to the consistency of Mr Whippy (soft serve) ice cream.
- Taste and if you want it to be sweeter then add some maple syrup or honey.
- Spoon into bowls and decorate with the toppings of your choice. My favourite toppings are granola, chia and frozen raspberries.
